Sunny Adventures.
Today's high was around 85 degrees and there were times I thought "phew I'm hot" then.. I started thinking, "How in the world am I going to make it in 115 degree weather when I move to AZ???" Yes. You heard me. I am moving to Arizona. Everything is happening so quickly and I couldn't be any happier. The last weekend of July, I will be in a car and on my way. I can't wait to explore once i'm there and see what the AZ has to offer.

Spinach Salad with Polenta Croutons, Pecan Encrusted Goat Cheese and a Pomegranate Mustard Dressing.
Its the first day of Summer and to me, that calls for a yummy salad for lunch time!
Salad
1/4th tube of Polenta cut into 1 inch cubes
1 ounce goat cheese
1 tablespoon chopped pecans
3 cups fresh spinach
1/2 cup of shredded carrots
Dressing
2 tablespoons pomegranate juice
1 teaspoon olive oil
1 teaspoon dijon mustard
370 Calories, Fat 21g (sat7g, mono8g, poly2g)
Cholesterol 20mg, Protein 11g, Carbohydrate 36g
Sugars 10g, Fiber 7g, Sodium 720mg

Summer Weddings.
If you are going to have a summer wedding, you better do it right. I'm talkin outdoors with great scenery, wild flowers everywhere, candles and dim lights along the rooftops, an open bar, cupcakes and dancing. My great friend Katie Plank and her new husband Nick Ramsrud did JUST that. What an amazing summer wedding and I can't get over how amazing these two are together. They are lifers! I also had the pleasure of doing Katie's makeup for the wedding. I am hoping the photographer got some good shots and I can't wait to share them with you.
