While at work yesterday, it was slow. We were dusting. A LOT. And of course chit chat arrises when you put creative minds to work... dusting. Anyway, I started telling my coworkers how excited I have been for the holiday season and how badly I wish I could come up with my own recipe instead of searching for them in magazines or online. I'm sure there have been many types of egg nog oatmeals made before BUT I am still super excited about the fact that I came up with this idea, recipe, ingredients, etc... all on my own.
What You Need...
- 1 cup steel cut oats
- 2 cups water
- 2 cups Silk Egg Nog
- 3 Tbsp of Brown sugar
- 1/2 cup of Almond Butter (unsalted)
- 2 Golden Apples cut into cubes.
Combine all ingredients together and simmer on medium heat for 40-45 minutes or until oatmeal is soft. Then, you stuff.
Its a little hot right at first.
And it still hot. But scary delicious!
This can be a fun Christmas morning breakfast that even the kiddies would love. (to shorten your cooking time, soak the steel cut oats in the water and egg nog over night. The cooking time will be shortened to 12-15 minutes!)
YUM! My friend and I made eggnog cupcakes with espresso frosting a few years back and they were to die!
